Recipes

Bounty Bowl

1 packet frozen coconut flesh (100g) (amazonia young and creamy coconut superfood packs) If you don't have this then replace with extra coconut cream and ice

1-2 frozen bananas

small handful almonds (approx 20)

2 tbs vanilla protein

2 tbs desiccated coconut

3/4 cup almond milk

4 ice cubes

2 tbs chilled coconut cream/milk

1 tbs cocoa powder

1tbs coconut oil

1 tbs rice malt syrup

a drop of vanilla (essence or bean paste)

  1. Melt coconut oil first, then add cocoa powder. Stir until dissolved. Add rice malt syrup. Turn off heat and add vanilla.

  2. Add all smoothie ingredients into blender. Blend.

  3. Serve in bowl. Top with drizzle of chocolate sauce. Watch it set!

Tess' Buddha Bowl

Handful of spinach

1 sweet potato

1 tbsp coconut oil

Option 1 tbsp Miso paste (softened in a little hot water)

A few chopped cherry tomatoes

Green vegetables of your choice (I used broccoli, asparagus and broccolini)

Sauerkraut (optional)

A protein (Boiled egg, tuna, chicken etc)

1 avocado

1/2 Lemon

Salt and Pepper

Large tsp Sweet Chilli Sauce

Olive oil (for dressing)

Any other vegetables you want to use

  1. Boil hot water and put chopped sweet potato in in until soft.

  2. Steam greens.

  3. Make avocado smash with 1/2 lemon, sweet chilli sauce.

  4. Prepare whatever protein you are using.

  5. Once sweet potato is cooked, mash it adding coconut oil, miso paste, salt and pepper.

  6. Place everything in a bowl and top with a drizzle of olive oil and lemon. It's that easy.

Cacao Bliss Balls

1 cup almond meal

6 medjool dates

2 tbsp desiccated coconut, plus extra for rolling

1 tbsp melted coconut oil (add more if needed)

2 tbsp cocoa

1 tbs cocoa powder

1tbs coconut oil

1 tbs vanilla essence

  1. In a food processor (professor) combine all ingredients. Blend until it's a smooth paste.

  2. Roll into balls using your hands, then cover with a layer of desiccated coconut. Yum! Store in air tight container in the fridge.
